Can he save himself from destruction effects that don't form a chain?

Zenmaines' effect of preventing itself from being destroyed is a continuous effect, meaning that it is applied as long as it is face-up on the field. So, yes, it can prevent itself from being destroyed whether by effect that forms a chain or not. In fact, destroying it through battle doesn't form a chain link and its effect is still applied.

What happens if there is a stardust dragon on the field and you attack zenmaines and it's effect is triggered at the endphase? Does stardust come back?

Yes. Stardust attacks Zenmaines. Zenmaines detaches 1 material. During end phase, Zenmaines' effect activates. You can negate with Stardust and force Zenmaines to detach 1 more material. And since it is still the end phase, you can special summon Stardust again.

Considering that Zenmaines destruction prevention ability isn't an effect that activate rather a continuous effect I'm going to go with Zenmaines can detact to save himself.

 Stardust Dragon has to destroy the card in question. If it does not destroy said card, it will not come back at all.

Suppose that the effect of "Stardust Dragon" is Chained to "Mystical Space Typhoon", and then "Emergency Provisions" is activated at Chain Link 3 by sending "Mystical Space Typhoon" to the Graveyard. In this case, "Stardust Dragon" cannot destroy "Mystical Space Typhoon", but "Stardust Dragon" still negates its activation, and you can still Special Summon "Stardust Dragon" from your Graveyard during the End Phase.[11]

Tl;dr, ruling says that as long as stardust negates the activation of the card, you can still summon stardust dragon.

TP6 Text clarifies the way it works. I was thinking SDD worked like Road. New card solving text reads as long as you negate the effect you may bring back the SDD in the endphase.

I think we're all on the same page now, but just to get everything in one place...

Zenmaines can detatch a material instead of being destroyed. This can be due to an effect's resolution, damage calculation, and by extention an effect that doesn't use the chain to destroy something (such as Safe Zone or Call of the Haunted). Then when the End Phase comes, you'll activate the destruction effect.

If Stardust Dragon negates this activation (which is likely would), Zenmaines can prevent itself from being destroyed. However (as pointed out by a ruling note higher up this page), since Stardust Dragon still negated an activation, its other effect to special summon it can be used.

Lastly, since Zenmaines' effect to destroy stuff can only be used once per turn, it can't be activated again during the same End Phase, as it was already done earlier on to try & destroy the Stardust Dragon (or something else).
