Pretty sure I already know the answer to this, but:

Let's say I add Fairy Wind as the last link of a chain. Let's say those other links are Ceasefire, Just Desserts, and Magical Cylinder. Since Fairy Wind will resolve first, does it destroy all those above cards, deal 300 damage per card, and then the other links in the chain resolve, dealing their own damage?

It wouldn't destroy them since it needs to be a face-up magic or trap card. So my guess is it just does 300 of damage.

They are face-up on the field before they resolve.

Also: Fairy Wind Doesn't count itself with it's effect.

Exactly. :)

That's why Magic Cylinder & friends would be destroyed & counted toward the amount of damage inflicted.
